Chunky Avocado Salsa



Remember that chunky avocado salsa I attempted the other day?  Well, a few days sitting out on the counter and the avocados were ripe and ready to be used.  It was pretty yummy..you might want to make it!!
Chunky Avocado Salsa:

4 ripe avocados (click here to learn how to pick perfect avocados)
2 large tomatoes
1 small red onion
2 limes
1 jalapeño (optional)
1/4 cup cilantro leaves (optional)
1/4 cup olive oil
salt and pepper, to taste

Seed and peel avocados.  Cut into large chuncks and place into a bowl.
Squeeze the juice of the limes over the avocado.
Dice the tomatoes into large pieces.  Place in the bowl with the avocados.
Wearing plastic gloves, stem, seed and de-vein the jalapeño.  Chop into fine pieces and add to the bowl.
Chop the cilantro into fine pieces and add into the bowl.
Stir the olive oil, salt and pepper into the bowl.
Cover and refrigerate until ready to serve.


Not only did we use it as a dip with chips, but also as a topper for taco salads!

Confession: I also snacked on it for breakfast the next day!!
