High Five For Friday


Happy Friday, everyone!  Here's my high five with a bonus 6!!  Be sure to check out the other High Fives!

1.  First Holiday World trip of the season!  We had beautiful sunny weather, but the water was freezing!


2.  Parker and Mommy checking out the full moon.


3.  I had a much needed girls night in Louisville.  Waterfront Wednesday and talking until 2 am with a best friend definitely makes the high five list!  Sorry, no pics :(

4.  I think I have a secret blog admirer!  Check out what someone left on my front porch this week...
Brandon's theory is a little more realistic. 
"Audra, I think the neighbor has heard you plotting to cut peonies from her bush so she went ahead and cut some for you so you don't have to commit any felonies to get them."
 Probably so, but who cares why I got them...I got flowers!

5.  The boys turning their playhouse into a tree house!

And just because I can I am going to add a #6 to my list...last night when I was putting Parker to bed he looked at me, gave me a big hug and then said, "Mom, I just love you so much."  It made my heart melt.  Love my boys!!

Have a great weekend!!  I'll be spending mine at Relay for Life and my oldest nephew's graduation party...can't believe he's old enough for college already.

Country Club Chicken



I'm not sure where the name "Country Club Chicken" came from, but call it whatever you wish...Either way it is WAY Good.  Be sure to check out other DIY projects, recipes and decorating tips at the Inspire Me Link Party
Ingredients:
1 pound spaghetti
4 chicken breasts
1 large onion
7 oz mushrooms
1 can concentrated cream of mushroom soup
4 or 5 slices bacon
1/4 cup dry white wine (or chicken broth)
2/3 cup sharp cheddar
1 apple
butter or oil
salt & pepper
Cook the bacon. 
While the bacon is cooking: mince the onion, chop the apple and cut the mushrooms.  
When the bacon is finished, remove it from the pan and brown the chicken on both sides in that same pan (you may need to add a bit of butter or oil...depending on how fatty your bacon was).  Once browned, remove from pan and put in a baking dish.
Using the same frying pan, sauté the onion and mushroom. After about 5 minutes of sautéing add the apple pieces.  Sauté for another 3 minutes.  
Add the crumbled bacon pieces.  Add salt and pepper.  Add dry white wine (I used chicken broth instead). Add concentrated cream of mushroom soup.  Add the shredded sharp cheddar cheese.  
Stir together.  Pour over the chicken breast in the baking dish.  Bake at 350 for 25-30 minutes. (Or until chicken is cooked and the sauce is bubbly hot)
While it's baking cook the noodles.
Put the chicken and sauce over the noodles and enjoy.  I garnished with a small piece of bacon.  And just in case you're wondering if your kiddos will like it....

Can't live without it...

So it's back to work for most after the Memorial Holiday weekend...but not for me!  Today is my official first day of summer vacation and guess where I'm going...School!  The last day of school I left a little overwhelmed and felt disorganized so I'm heading to school today for a quick scan through of my new classroom to make sure I have things where they belong.  Today's blog post is about my everyday must-haves.  I've posted often about things recently purchased or things that I would like to purchase.  I thought it would be fun to tell you about the things I have, that I can't live without.  Ok, well maybe that's a bit extreme...but I do love them!!

High Five For Friday

Sorry I took a few days off from the blog this week.  The end of the school year wears me out so I chose to relax rather than blog!  Anyways, here's my high five for the week!

1.  Parker had his last t-ball game of the year!


2.  The little something Brandon had waiting for me when I got home from work the other day.  He knows there's not much that I love more than diet drinks and O-KE-DOKE popcorn!


3.  Today's the last day of school!
4.  Someone's going to be eating fresh from the garden lettuce.

4 days and counting

I love my job.  I love my students.  But, I also love my summers... Getting to spend time with my kids.  Sleeping in (til 7).   Working around the house and getting things organized.  Can't wait!!

Here's a few of my much needed "To Do's" for this summer:
*Clean out closets...uh, this is ridiculous!
(no, I normally don't throw my children's clothes on the floor...they're ready to be tossed in the "hand-me-down" tub)

*Pretty up my laundry area in the basement.  I'm hoping that with some paint and TLC I can go from this:

cheesecake cupcakes

Here's a recipe for all of you cheesecake lovers...not to mention the creamy salted caramel sauce on top! 



Salted Caramel Cheesecakes (this recipe made 24 mini cupcakes and 12 regular sized cupcakes with some batter left over)

Ingredients:
  • 2 1/4 cups finely crushed graham crackers (from 18 sheets)
  • 3 Tbsp granulated sugar
  • 6 Tbsp salted butter, melted
  • 4 (8 oz) pkg cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 3 Tbsp all-purpose flour
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • Salted Caramel Sauce or Strawberry Sauce, recipes follow
Directions:
  • Preheat oven to 350 degrees. In a mixing bowl, whisk together crushed graham crackers with 3 Tbsp granulated sugar. Pour in melted butter and stir mixture until evenly coated. Divide graham cracker mixture among 24 paper lined muffin cups, adding about a heaping Tbsp to each. Press mixture into an even layer. Bake in preheated oven 5 minutes. Remove from oven and allow to cool while preparing filling.
  • In a small mixing bowl, whisk together 1 1/2 cups granulated sugar with 3 Tbsp flour until well blended. Add softened cream cheese to a separate mixing bowl and pour sugar mixture over top. Blend mixture on low speed until smooth. Mix in eggs one at a time and blend on low speed, while scrapping sides and bottom of bowl and mixing just until combined after each addition. Add vanilla, sour cream and heavy cream and mix just until combined. Tap mixing bowl against counter top about 30 times to release some of the air bubbles. Divide mixture among muffin cups filling each cup nearly full. Bake in preheated oven 20 - 23 minutes, centers should still jiggle slightly, don't overbake (if they begin to crack they are starting to become overbaked). Remove from oven and allow to cool 1 hour. Cover loosely with plastic wrap and transfer to refrigerator and chill 2 hours. Serve chilled with a spoonful of Salted Caramel Sauce or Strawberry Sauce (note: for best results spoon topping on just before serving). Store in an airtight container in refrigerator or freeze.
Caramel Sauce
Ingredients
  • 1 1 /2 cups granulated sugar
  • 1/4 cup + 2 Tbsp water
  • 6 Tbsp salted butter
  • 1 cup heavy cream
  • Maldon or coarse sea salt, for sprinkling
Directions
  • Gather all of your ingredients and have them nearby ready to add to the mixture as needed. In a heavy-bottomed 3 quart saucepan, heat sugar and water over moderately high heat whisking constantly to dissolve sugar. Once mixture reaches a boil, stop whisking and allow mixture to boil until it reaches a dark amber color, carefully swirling pan occasionally. Once mixture reaches a dark amber color, immediately add butter and whisk until butter has melted then immediately remove from heat. Wait 3 seconds then carefully pour in cream and immediately whisk to combine (it will bubble vigorously). Whisk until mixture is smooth. Allow caramel to cool several minutes then pour into a glass jar to cool. Sprinkle lightly with sea salt after spooning caramel over cheesecakes

High Five For Friday

Here we go again!  Here's my high five for the week...

1.) YAAY for the irises blooming.  BOO to the helicopters all over our back patio!




2.). Gotta love this weather!  The boys helping with the yard work.



3.)  Just a little FYI:  We have completed around 88 of our 706 miles to Hilton Head.  (give or take a few)

4.). I got to use some of my new Pampered Chef cooking gear.  I'm loving my new silicone prep bowls.  They are perfect for pouring batter with their flexible silicone form.
5.). Gotta love evenings when I can feel like I'm eating a gourmet meal and all I had to do was put it in the oven. 

Have a good weekend!!  I'm hoping for some nice weather so we can make our first trip of the summer to Holiday World!

jars

So I am a big fan of fresh flowers.  I love the spring and summer when the flowers in my yard start to bloom because that means there will be some pretty flowers to decorate my house with.  I especially love it when Brandon brings lilacs from the farm because they smell AMAZING.  I find the best vase for these fresh flowers is a mason jar.  The taller vases I have are just too tall and often times the mouth of the vase is too wide for a small bunch of flowers.
